New Modern Bistro serves up food with a European flair

CUMBERLAND - Bringing a bit of Providence to northern Rhode Island, two former Rue De L'espoir employees have opened Modern Bistro, a breakfast and lunch restaurant, at 4077 Mendon Road.

Jason and Sabriea Periquito, of North Providence, run the restaurant that occupies the former Moon's Landing location. Head chef is Mike Koussa, who was head chef at the East Side restaurant for 32 years.

It was there he met Sabriea, who worked there for nine years, but grew up in the restaurant business with her father's Stacey's Diner. It was open in Providence for 18 years before he retired.

"It's been in my blood forever," Sabriea said. "It's always kind of been that we wanted to venture out eventually."

Once the pair decided to go into business together, Koussa spotted the Mendon Road location just a few streets away from his Cumberland home.

Modern Bistro opened June 30, and business has been picking up, Sabriea said, adding that this past Sunday was the busiest day yet. Homemade crepes and baked goods like popovers, scones and muffins are among the most popular items.

Koussa serves up modern American cooking with a European flair, Sabriea said. Staples like omelets, breakfast sandwiches and french toast sit alongside more creative dishes like falafel burgers, ratatouille crepes, and pancake rolls filled with vanilla yogurt.

There are daily specials and a full bar for beer, wine and brunch cocktails, like Bloody Marys. Modern Bistro uses foods from local growers and bakeries. The fresh breads are picked up every morning from Wayland Bakery in Providence's Wayland Square.

Sabriea said opening a Cumberland restaurant has been rewarding so far, and she looks forward to welcoming even more patrons.

"It's rewarding when the customers actually love the food, enjoy the atmosphere and just enjoy the time that they're here," she said.

The restaurant is open every day from 7 a.m. to 3 p.m. Breakfast is served all day, and lunch starts at 11:30 a.m. Sabriea said they are considering serving dinner on Friday and Saturday nights in the future.
