LINCOLN - The PieZoni's franchise has come to Lincoln, with a restaurant opening in the new Albion Commons at 618 George Washington Highway.

Owner Roy Vicente, a Cumberland resident who works full-time in the banking industry, said he had always wanted to open up a restaurant.

"I've always wanted to own my own business," said the husband and father of two. "I've always liked the food industry."

Since doors opened in December, business has been "going really well" with "good word of mouth," Vicente said.

PieZoni's has been around for 12 years with Joe Ferreira and Victor Martinez, who each have 30 years experience working with pizza, Vicente said, so an emphasis is put on high-quality food and ingredients.

All meat and produce for the Lincoln shop comes from local businesses, he said.

"The food is high-end. It's a good product," Vicente said, adding that prices are affordable. A small signature pizza costs less than $10.

The restaurant serves pizza with a variety of meat and vegetable toppings, all of which can be made with gluten-free crust. In addition to pizzeria staples like meatlovers, Mediterranean and buffalo chicken, toppings like grilled chicken caesar and bacon double cheeseburger can also be put atop a pie.

Calzones, subs, burgers, pasta dishes and fresh salads are also on the menu, plus appetizers like calamari and mozzarella sticks.

Staff members include manager Tanya Abreu, a culinary graduate from Johnson & Wales University who has been working in the food industry for 10 years. Vicente said he also tries to give employment opportunities to high-schoolers and young adults to provide a stepping stone into a potential career path.

"It's a good family place," Vicente said. "I like to create a positive environment. It's about quality and good customer service."

PieZoni's is open Sunday through Thursday from 11 a.m. to 9 p.m., and Friday and Saturday from 11 a.m. to 10 p.m.
